Creamy Tofu Pasta

Prepare the Tofu Sauce In a blender, combine the drained tofu, almond milk, nutritional yeast, minced garlic, lemon juice, dried basil, onion powder, smoked paprika, salt, and pepper. Blend until smooth and creamy.

Cook the Pasta Boil a pot of water, add a pinch of salt, and cook the spaghetti pasta according to the package instructions. Drain and set aside.

Combine Pasta with Tofu Sauce In a large pan, heat olive oil over medium heat. Pour the blended tofu sauce into the pan and cook for 2-3 minutes, stirring constantly. Add the cooked pasta and toss until well coated.

Serve Divide the creamy tofu pasta into plates. Garnish with fresh parsley, red pepper flakes, vegan parmesan cheese, and a squeeze of lemon juice. Add any optional toppings if desired. Enjoy hot!
