Creamy Coconut Lentil Curry

1.Rinse the dried lentils under cold water and set aside.

2.In a large pot, heat some oil over medium heat. Add the chopped onions and cook until translucent, about 5 minutes.

3.Add the minced garlic and grated ginger, and cook for another 2 minutes until fragrant.

4.Stir in the diced bell pepper and chopped tomatoes. Cook for 5 minutes until the vegetables start to soften.

5.Add the cumin, turmeric, coriander, curry powder, and chili powder. Stir well to combine.

6.Pour in the coconut milk and add the rinsed lentils. Bring to a simmer and cook for about 20-25 minutes, stirring occasionally, until the lentils are tender and the curry has thickened to your desired consistency.

7.Taste and adjust the seasoning as needed.

8.Serve the creamy coconut lentil curry hot, garnished with fresh cilantro. Enjoy!
