New Year's Fish Stew

1.In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic. Cook until the onion is translucent, about 3-4 minutes.

2.Add the chopped tomatoes, sliced bell pepper, paprika, cayenne pepper, and bay leaf to the pot. Cook for another 5 minutes, stirring occasionally.

3.Pour in the fish stock and white wine. Bring the mixture to a simmer.

4.Add the mixed seafood to the pot and simmer until the seafood is cooked through, about 10-15 minutes.

5.Season the stew with salt and pepper to taste. Stir in the chopped parsley and simmer for an additional 2 minutes.

6.Remove the bay leaf from the stew before serving.

7.Serve the New Year's Fish Stew hot, garnished with lemon slices and additional parsley if desired.

8.Enjoy this flavorful and festive stew with crusty bread or over a bed of rice.
