Christmas Kare Kare

1.In a large pot, boil the oxtail and tripe until tender. Remove from the pot, drain, and set aside.

2.In a separate pot, combine annatto seeds and water. Simmer for 5 minutes, then strain to get annatto water. Set aside.

3.In a pan, toast rice until golden brown. Grind to make toasted rice powder.

4.Dissolve rice flour in water to make a slurry. Set aside.

5.In a separate pot, sauté garlic and onions until fragrant. Add the boiled oxtail and tripe.

6.Pour in the annatto water and beef broth. Bring to a boil and simmer for 1 hour.

7.Stir in the peanut butter, ground roasted peanuts, toasted rice powder, lemon grass, bay leaf, sugar, and ground black pepper. Simmer for another 30 minutes.

8.Add the eggplant, banana heart, and string beans. Simmer until vegetables are tender.

9.Thicken the sauce by gradually adding the rice flour slurry. Stir constantly until desired thickness is achieved.

10.Serve hot with a side of shrimp paste and enjoy your Christmas Kare Kare!
