Christmas Jackfruit Brisket

1.Preheat the oven to 325°F (165°C).

2.Drain and rinse the jackfruit, then shred it using your hands or forks to mimic pulled pork.

3.In a large skillet, heat olive oil over medium heat, and sauté the chopped onion and garlic until fragrant, about 3-5 minutes.

4.Add the shredded jackfruit to the skillet and cook for another 5 minutes, stirring occasionally.

5.In a bowl, combine soy sauce, tomato paste, maple syrup, smoked paprika, cumin, cinnamon, black pepper, and cayenne pepper.

6.Pour the sauce mixture over the jackfruit and stir until well coated. Cook for an additional 2-3 minutes.

7.Transfer the jackfruit mixture to a baking dish.

8.In a separate bowl, whisk together vegetable broth, apple cider vinegar, and cornstarch until smooth.

9.Pour the broth mixture over the jackfruit in the baking dish.

10.Cover the dish with foil and bake in the preheated oven for 1 hour, then remove the foil and bake for an additional 30 minutes, basting the jackfruit occasionally.

11.In a small saucepan, mix cornstarch and water to create a slurry.

12.Add the slurry to the brisket drippings in the baking dish and stir well.

13.Return the dish to the oven and bake for another 15 minutes, or until the sauce thickens and coats the jackfruit brisket evenly.

14.Serve the Christmas Jackfruit Brisket hot, garnished with fresh herbs or cranberries, and enjoy the holiday flavors!
