Elderberry and Pecan Fudge

1.In a large saucepan, combine elderberry juice, sugar, butter, and heavy cream over medium heat.

2.Stir continuously until the mixture reaches a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally.

3.Add the chopped pecans, vanilla extract, cinnamon, and nutmeg to the mixture, stirring well to combine.

4.Continue to cook the mixture on low heat for another 10-15 minutes, stirring frequently until it thickens and reaches the soft-ball stage (235°F on a candy thermometer).

5.Remove the saucepan from heat and stir in the white chocolate chips until fully melted and smooth.

6.Pour the fudge mixture into a parchment-lined baking dish, spreading it evenly with a spatula.

7.Let the fudge cool at room temperature for about 2 hours, then refrigerate for an additional 2 hours to set.
