Creamy Vegetable Stuffed Bell Peppers

1.Preheat the oven to 375°F (190°C).

2.Cut the tops off the bell peppers and remove the seeds and membranes.

3.In a mixing bowl, combine the cream cheese, mixed vegetables, cheddar cheese, parsley, green onions, garlic powder, onion powder, and paprika. Mix well until all ingredients are evenly incorporated.

4.Stuff each bell pepper with the cream cheese and vegetable mixture, pressing down gently to fill the peppers.

5.Place the stuffed bell peppers in a baking dish and cover with foil.

6.Bake in the preheated oven for 25-30 minutes, or until the peppers are tender and the filling is heated through.

7.Remove the foil and bake for an additional 5-10 minutes to allow the tops to brown slightly.

8.Serve the creamy vegetable stuffed bell peppers hot, garnished with additional parsley and green onions if desired.
