Fluffy Milk and Egg Gelatin Dessert

1.In a small bowl, sprinkle the gelatin over 1/4 cup of cold milk and let it sit for about 5 minutes to bloom.

2.In a saucepan, heat the remaining 3/4 cup of milk over medium heat until warm but not boiling. Remove from heat and stir in the bloomed gelatin until fully dissolved.

3.In a separate bowl, whisk together the eggs, sugar, vanilla extract, baking soda, and salt until well combined and frothy.

4.Gradually add the warm milk and gelatin mixture to the egg mixture, whisking continuously to prevent the eggs from cooking.

5.Pour the mixture into a greased mold or individual serving cups.

6.Refrigerate for at least 4 hours or until set.

7.Once set, gently unmold the dessert onto a serving plate or serve directly in cups.
