Perfectly Fluffy Focaccia Bread

1.In a mixing bowl, combine the warm water, sugar, and instant yeast. Stir gently and let it sit for about 5-10 minutes until it becomes frothy.

2.In a separate large bowl, mix the wheat flour and salt together.

3.Once the yeast mixture is frothy, add it to the flour mixture along with the olive oil. Stir until a dough begins to form.

4.Transfer the dough onto a floured surface and knead for about 5-7 minutes until it becomes smooth and elastic.

5.Place the kneaded dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until it doubles in size.

6.After the dough has risen, punch it down to release the air. Transfer it to a greased baking tray and stretch it out to fit the tray.

7.Use your fingers to create dimples all over the surface of the dough. Drizzle with olive oil and sprinkle with fresh rosemary leaves and coarse sea salt.

8.Cover the dough again and let it rise for another 30 minutes.

9.Preheat your oven to 220°C (428°F).

10.Once the dough has risen again, bake it in the preheated oven for about 20-25 minutes or until golden brown.

11.Remove from the oven and let it cool slightly before slicing. Serve warm.
