Fluffy Egg and Maida Pancakes

1.In a mixing bowl, combine the maida, sugar, baking powder, and salt. Whisk together until well mixed.

2.In another bowl, beat the eggs and then add the milk and vanilla extract. Mix until combined.

3.Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

4.Add the melted butter to the batter and fold it in gently until incorporated.

5.Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or oil.

6.Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

7.Flip the pancakes and cook for another 2-3 minutes until golden brown and cooked through.

8.Remove the pancakes from the skillet and keep them warm. Repeat with the remaining batter.
