Savory Minced Meat and Vegetable Bake

1.Preheat your oven to 200°C (400°F).

2.In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.

3.Add the minced meat to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.

4.Stir in the sliced leek and diced red bell pepper, cooking for an additional 5 minutes until the vegetables are softened.

5.Season the mixture with paprika powder, dried thyme, salt, and black pepper. Mix well and remove from heat.

6.In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 10-15 minutes. Drain and set aside.

7.In a large mixing bowl, combine the cooked potatoes with the meat and vegetable mixture. Stir in the eggs until everything is well combined.

8.Transfer the mixture into a greased baking dish, spreading it evenly. If desired, sprinkle grated cheese on top for a cheesy finish.
