Crispy Spiced Chicken Sandwich

1.Begin by marinating the chicken breasts. In a bowl, combine the buttermilk, 1 teaspoon of salt, and 1/2 teaspoon of black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour, or overnight for best results.

2.In a separate bowl, mix together the flour, remaining black pepper, white pepper, sweet paprika, paprika, onion powder, garlic powder, and the remaining salt. This will be your seasoned flour for coating the chicken.

3.Remove the marinated chicken from the refrigerator. Allow excess buttermilk to drip off, then dredge each chicken breast in the seasoned flour, pressing gently to ensure an even coating. Shake off any excess flour.

4.Heat oil in a deep skillet or frying pan over medium-high heat. Once the oil is hot (around 350°F or 175°C), carefully add the coated chicken breasts. Fry for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).

5.Once cooked, transfer the chicken to a paper towel-lined plate to drain excess oil.

6.To assemble the sandwich, toast the sandwich buns lightly. Spread mayonnaise on the bottom half of each bun, then place a lettuce leaf, followed by a fried chicken breast, tomato slices, and pickles if desired. Top with the other half of the bun.
