Feta Spinach Rice Delight

1.Rinse the rice under cold water until the water runs clear, then drain.

2.In a medium saucepan, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.

3.Add the minced garlic and dried oregano to the onions, cooking for an additional minute until fragrant.

4.Stir in the rinsed rice, allowing it to toast slightly for about 2 minutes, stirring frequently.

5.Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the rice is cooked and the liquid is absorbed.

6.While the rice is cooking, in a separate pan, lightly sauté the chopped spinach over medium heat until wilted, about 3-4 minutes. Season with salt and pepper to taste.

7.Once the rice is done, fluff it with a fork and gently fold in the sautéed spinach and crumbled feta cheese until well combined.

8.Serve warm, garnished with additional feta if desired.
