Tony's Mexican Pizza with Original Cornbread Crust

1.Preheat your oven to 400°F (200°C). Grease a 12-inch pizza pan or a large baking sheet.

2.In a large bowl, combine the cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well.

3.In a separate bowl, whisk together the milk, vegetable oil, and egg until well combined.

4.Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

5.Spread the cornbread batter evenly onto the prepared pizza pan or baking sheet, forming a crust.

6.Bake the cornbread crust in the preheated oven for 15-20 minutes, or until golden brown and set. Remove from the oven and set aside.

7.While the crust is baking, heat a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.

8.Drain any excess fat from the skillet. Add the taco seasoning and 1/2 cup of water to the beef. Stir to combine and simmer for 5 minutes, or until the mixture thickens.

9.Spread the refried beans evenly over the baked cornbread crust.

10.Top the beans with the cooked taco beef, spreading it evenly over the surface.

11.Spoon the salsa over the beef layer, then sprinkle the shredded Mexican cheese blend evenly on top.

12.Return the pizza to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

13.Remove the pizza from the oven and let it cool for a few minutes.

14.Garnish the pizza with sliced black olives, chopped green onions, and fresh cilantro.

15.Cut the pizza into slices and serve with sour cream, avocado slices, and lime wedges on the side.
