Crispy Spiced Paneer Burger With Sweet Potato Fries

1.Preheat the oven to 220°C/200°C (fan)/gas 7.

2.Cut the sweet potatoes (skins on) into fries.

3.Add the fries to a baking paper-lined baking tray with a drizzle of vegetable oil and a pinch of salt and pepper. Mix well and put the tray in the oven for 20-25 min until golden and crisp.

4.Peel and finely slice the red onion. Combine the cider vinegar and 1 tsp (2 tsp) sugar in a small bowl with the sliced onion and set aside.

5.Combine the cornflour and curry powder on a plate with a pinch of salt and pepper. Add the halved paneer to the curried flour and turn them several times until fully coated.

6.Slice the brioche buns in half. Add the brioche halves to a baking tray and put the tray in the oven for 3-4 min or until lightly toasted.

7.Combine the yoghurt and mint sauce in a bowl.

8.Slice the paneer in half, lengthways.

9.Heat a large, wide-based pan with a drizzle of vegetable oil over medium heat. Add the coated paneer and cook for 3-4 min on each side until golden and crisp.

10.Spread mango chutney over each toasted brioche lid.

11.To build, top each toasted brioche base with a reserved lettuce leaf, the crispy spiced paneer, a dollop of mint yoghurt, some quick-pickled onion, and a toasted brioche lid.

12.Serve the sweet potato fries and gem wedges to the side, then spoon the remaining quick-pickled onion and mint yoghurt over the gem wedges. Enjoy!
