Mini Banana Pancakes with Maple Drizzle

2.In another bowl, mash the ripe banana until smooth. Add the buttermilk, egg, melted butter, and vanilla extract to the mashed banana. Mix until well combined.

3.Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix; a few lumps are okay.

4.Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray if necessary.

5.Using a tablespoon, pour small amounts of batter onto the skillet to form mini pancakes. Cook for about 1-2 minutes or until bubbles form on the surface and the edges look set.

6.Flip the pancakes and cook for an additional 1-2 minutes until golden brown and cooked through. Repeat with the remaining batter, adjusting the heat as needed to prevent burning.

7.Serve the mini pancakes warm, drizzled with maple syrup.
