Fluffy Garlic Herb Focaccia

1.In a large mixing bowl, combine the flour, instant yeast, sugar, and salt. Mix well to combine all the dry ingredients.

2.Add the warm water and 2 tablespoons of olive oil to the dry ingredients. Stir with a wooden spoon or spatula until a shaggy dough forms.

3.Cover the bowl with plastic wrap or a damp kitchen towel and let it rise in a warm place for about 1 to 2 hours, or until doubled in size.

4.Once the dough has risen, preheat your oven to 425°F (220°C).

5.Drizzle a baking sheet (about 18x13 inches) with the remaining 2 tablespoons of olive oil, ensuring the bottom is well coated.

6.Transfer the risen dough onto the oiled baking sheet. Using your fingers, gently stretch and press the dough to fit the shape of the pan, creating dimples all over the surface.

7.In a small bowl, mix the minced garlic, chopped rosemary, and thyme together. Sprinkle this herb mixture evenly over the surface of the dough, pressing it gently into the dimples.

8.Sprinkle the flaky sea salt and freshly cracked black pepper over the top of the focaccia.

9.Cover the dough again with a kitchen towel and let it rest for another 20-30 minutes to rise slightly.

10.Bake the focaccia in the preheated oven for 20-25 minutes, or until golden brown and crispy on the edges.

11.Remove from the oven and let it cool slightly before slicing. Serve warm or at room temperature.
