Kaju Katli with a Twist: Saffron Infused Delight

1.Soak the saffron strands in 2 tablespoons of warm water and set aside to infuse.

2.In a blender, grind the cashew nuts into a fine powder. Be careful not to over-blend, as it can turn into cashew butter.

3.In a non-stick pan, combine sugar and water. Heat over medium flame until the sugar dissolves completely, stirring occasionally.

4.Once the sugar syrup reaches a one-string consistency, add the saffron infusion, ghee, and cardamom powder. Mix well.

5.Gradually add the cashew powder to the syrup, stirring continuously to avoid lumps. Cook the mixture on low heat until it starts to leave the sides of the pan and forms a dough-like consistency.

6.Remove the mixture from the heat and let it cool slightly. Once it's cool enough to handle, knead it gently to make it smooth.

7.Place the dough between two sheets of parchment paper and roll it out to about 1/4 inch thickness using a rolling pin.

8.Cut the rolled dough into diamond shapes using a sharp knife or a pizza cutter. Garnish with chopped pistachios on top while the katlis are still soft.

9.Allow the Kaju Katli to cool completely before serving. Enjoy your saffron-infused delight!
