Meatloaf

1.PRE-COOKING THE VEGGIES Add butter to skillet on a medium temperature setting. Add onions and peppers. Add salt. Cook for 2 minutes. Add garlic and cook for 1 additional minute. Set aside. Allow to cool for 15 minutes.

2.BUILDING THE MEATLOAF Add ground beef to a mixing bowl. Next, add parsley, paprika, garlic powder, black pepper, kosher salt, Worcestershire sauce, and cooked onion and pepper mix. Mix thoroughly. Next add beaten eggs, half and half. Gradually add breadcrumbs and mix in increments. Fold and mix all ingredients until evenly combined. Set aside. Refrigerate for 30 minutes.

3.MAKING THE GLAZE Combine ketchup, BBQ sauce, Dijon mustard, brown sugar, salt, and pepper into a mixing bowl. Mix until smooth. Set aside.

4.PREPARING TO COOK THE MEATLOAF Shape the meatloaf into desired shape using a flat surface. Once shaped, transfer onto a cooling rack, layered on top of a sheet pan. Sprinkle all-purpose seasoning on top of loaf. Preheat oven to 375°F.

5.COOKING THE MEATLOAF Place meatloaf in oven and bake for 1 hour. After cooking for 1 hour, remove from oven and brush glaze sauce onto the meatloaf. Cook for an additional 25 minutes. Allow meatloaf to reach an internal cooking temperature of 165°F for proper doneness. Once done, allow to cool for 15 minutes before serving. ENJOY!
