Christmas Kaldereta with a Twist

1.Heat the cooking oil in a large pot over medium heat.

2.Add the chopped onions and minced garlic, sauté until fragrant and the onions are translucent.

3.Add the diced pork belly and cook until browned.

4.Stir in the beef cubes and cook until they are browned on all sides.

5.Pour in the soy sauce and vinegar, and let it simmer for about 5 minutes to allow the flavors to meld.

6.Add the tomato sauce, beef broth, sugar, paprika, and bay leaves. Stir well to combine.

7.Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 1.5 hours or until the meat is tender, stirring occasionally.

8.Once the meat is tender, add the cubed potatoes, sliced carrots, and diced bell peppers. Stir to combine and cover the pot again.

9.Continue to simmer for another 30 minutes or until the vegetables are cooked through.

10.Add the green peas and season with salt and pepper to taste. Stir well and cook for an additional 5 minutes.

11.Remove from heat and let it rest for a few minutes before serving.
