Saffron-Infused Jalebi Bliss

1.In a small bowl, soak the saffron strands in warm water for about 10 minutes to release their color and flavor.

2.In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, turmeric powder, and cardamom powder. Mix well.

3.Add the saffron-infused water, yogurt, and additional warm water to the dry ingredients. Whisk until you have a smooth, thick batter. Let it rest for 30 minutes.

4.While the batter is resting, prepare the sugar syrup. In a saucepan, combine sugar and 1/2 cup of water. Heat over medium heat until the sugar dissolves completely. Add lemon juice and let it simmer for 5 minutes. Remove from heat and set aside.

5.Heat oil in a deep frying pan over medium heat. To check if the oil is ready, drop a small amount of batter into the oil; it should sizzle and rise to the surface.

6.Transfer the batter to a piping bag or squeeze bottle with a small nozzle. Once the oil is hot, carefully squeeze the batter into the oil in circular shapes, creating spirals and loops. Fry until golden brown and crispy on both sides, about 2-3 minutes per side.

7.Remove the jalebi from the oil and immediately dip them into the warm sugar syrup for about 10-15 seconds, ensuring they are well coated.

8.Place the syrup-coated jalebi on a plate lined with parchment paper to drain excess syrup. Repeat the frying and dipping process until all the batter is used.
