Vanillekipferl - Grandma's Best Recipe!

1.Mix flour with almonds and powdered sugar in a bowl. Cut the vanilla pod lengthwise and scrape out the seeds. Add them to the bowl along with salt, butter in cubes, and egg yolks. Quickly knead everything into a smooth dough with your hands. Wrap in foil and refrigerate for 1 hour.

2.Preheat the oven to 180 degrees Celsius (fan: 160 degrees Celsius). Line baking sheets with parchment paper. Divide the dough into 4 parts. Take portions of the dough from the refrigerator and form walnut-sized pieces into crescents, placing them on the sheet with some space between each.

3.Bake the Vanillekipferl in the preheated oven for about 8 minutes. Meanwhile, mix powdered sugar and vanilla sugar in a bowl. Carefully roll the Vanillekipferl in the sugar mixture immediately after baking and let them cool completely on a wire rack.
