Spicy Thai Chicken Satay Skewers with Creamy Peanut Sauce

1.In a large bowl, combine soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, red curry paste, ground coriander, turmeric, cayenne pepper, and vegetable oil to create the marinade.

2.Add the chicken cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.

3.Preheat your grill or grill pan over medium-high heat.

4.Thread the marinated chicken onto the soaked wooden skewers, leaving a little space between each piece for even cooking.
