Easter Lamb Stroganoff: A Festive Twist on the Classic

1.Heat the olive oil in a large skillet over medium-high heat. Add the lamb pieces and season with salt and pepper. Sear the lamb until browned on all sides, about 5-7 minutes. Remove the lamb from the skillet and set aside.

2.In the same skillet, add the chopped onion and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

3.Add the sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5 minutes.

4.Sprinkle the flour over the mushroom mixture and stir to combine, cooking for another minute to eliminate the raw flour taste.

5.Pour in the beef broth, stirring constantly to avoid lumps. Bring the mixture to a simmer and let it thicken slightly, about 3-4 minutes.

6.Stir in the sour cream, Dijon mustard, thyme, and paprika. Return the lamb to the skillet and simmer for an additional 5-10 minutes until the lamb is cooked through and the sauce is creamy. Adjust seasoning with salt and pepper as needed.
