Savory Pork in Sour Cream Sauce with Egg Noodles

1.In a large skillet, heat a tablespoon of oil over medium-high heat. Add the pork pieces, season with salt and pepper, and sauté until browned on all sides, about 5-7 minutes. Remove the pork from the skillet and set aside.

2.In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.

3.Return the pork to the skillet. Stir in the chicken broth, Dijon mustard, paprika, and thyme. Bring to a simmer, then reduce the heat to low. Cover and let it simmer for about 20 minutes, or until the pork is tender.

4.Stir in the sour cream and cook for an additional 5 minutes, allowing the sauce to thicken slightly. Adjust seasoning with salt and pepper if needed.

5.Meanwhile, cook the egg noodles according to package instructions until al dente. Drain and set aside.

6.To serve, place a portion of egg noodles on each plate, top with the savory pork in sour cream sauce, and garnish with fresh parsley.
