Mediterranean Beef Pide Delight

1.In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 10 minutes until frothy.

2.In another bowl, mix flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Stir until a dough forms.

3.Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1 hour or until doubled in size.

4.While the dough is rising, heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sautéing until softened.

5.Add the diced bell pepper and cook for another 2-3 minutes. Then, stir in the ground beef, cooking until browned.

6.Once the beef is browned, add diced tomatoes, tomato paste, cumin, coriander, paprika, cayenne pepper (if using), salt, and black pepper. Simmer for about 10 minutes until the mixture thickens. Remove from heat and let it cool slightly.

7.Preheat your oven to 220°C (428°F).

8.Once the dough has risen, punch it down and divide it into 4 equal portions. Roll each portion into an oval shape about 1/4 inch thick.

9.Place a generous amount of the beef mixture along the center of each oval, leaving the edges clear. Fold the edges over the filling to create a boat shape, pinching the ends to seal.

10.Brush the tops of the pide with the beaten egg for a golden finish.

11.Place the pide on a baking sheet lined with parchment paper and bake in the preheated oven for 15-20 minutes or until golden brown.

12.Remove from the oven and let cool slightly. Garnish with fresh parsley before serving.
