Christmas Kutsinta with Coconut Latik and Holiday Sprinkles

1.In a mixing bowl, combine 1 cup rice flour, 1/2 cup brown sugar, 1 cup coconut milk, 1/2 cup water, 1 teaspoon pandan extract, 1 teaspoon baking powder, and 1/4 teaspoon salt. Whisk until smooth and well combined.

2.Prepare the steamer by filling it with water and bringing it to a boil. Lightly grease small molds or a muffin tin with oil to prevent sticking.

3.Pour the kutsinta mixture into the prepared molds, filling them about 3/4 full. Place the molds in the steamer, cover with a lid, and steam for about 30-35 minutes, or until a toothpick inserted in the center comes out clean.

4.While the kutsinta is steaming, prepare the latik. In a small saucepan, combine 1/2 cup coconut cream and 1/4 cup sugar over medium heat. Cook, stirring constantly, until the mixture thickens and turns golden brown, about 10-15 minutes. Remove from heat and let cool slightly.

5.Once the kutsinta is cooked, remove them from the steamer and let them cool in the molds for about 10 minutes before gently removing them.

6.To serve, place the kutsinta on a serving plate, drizzle with the coconut latik, and generously sprinkle with colorful holiday sprinkles. Enjoy your festive treat!
