Bananas Foster

1.In a large skillet, melt the unsalted butter over medium heat until it begins to foam, about 1 minute.

2.Add the brown sugar and ground cinnamon to the skillet, stirring continuously until the sugar has dissolved and the mixture is bubbly, about 2-3 minutes.

3.Carefully add the sliced bananas to the skillet, cooking for 1-2 minutes on each side until they are caramelized and tender.

4.Pour the dark rum over the bananas, and using a long lighter or match, carefully ignite the rum to flambé. Allow the flames to subside as the alcohol burns off, about 30 seconds.

5.Remove the skillet from heat and stir in the vanilla extract, mixing well to combine.

6.To serve, place a scoop of vanilla ice cream in a bowl or on a plate, and generously spoon the caramelized banana mixture over the top. Garnish with fresh mint leaves if desired.
