Austrian Pretzel-Crusted Mozzarella Sticks

1.Prepare the mozzarella sticks by cutting the cheese into 1-inch thick sticks and placing them on a parchment-lined baking sheet. Freeze the mozzarella sticks for about 15-20 minutes until firm but not frozen solid.

2.Set up a breading station: In one shallow dish, place the all-purpose flour. In a second shallow dish, whisk together the eggs and water until well combined. In a third shallow dish, mix the pretzel breadcrumbs with garlic powder, onion powder, smoked paprika, salt, and black pepper.

3.Remove the mozzarella sticks from the freezer. Dredge each stick in flour, shaking off the excess. Dip it into the egg mixture, allowing any excess to drip off, then coat it in the pretzel breadcrumb mixture, pressing gently to adhere. Repeat with all mozzarella sticks.

4.In a large skillet, heat about 1/2 inch of vegetable oil over medium heat until it reaches 350°F (175°C). To test the oil, drop in a small piece of bread; it should sizzle immediately.

5.Carefully add the breaded mozzarella sticks to the hot oil, working in batches to avoid overcrowding. Fry for about 2-3 minutes on each side, or until golden brown and crispy. Use a slotted spoon to transfer the sticks to a paper towel-lined plate to drain excess oil.

6.While the mozzarella sticks are frying, prepare the spicy paprika aioli by combining mayonnaise, Dijon mustard, lemon juice, smoked paprika, cayenne pepper, and salt in a small bowl. Mix until smooth and adjust seasoning to taste.

7.Serve the crispy pretzel-crusted mozzarella sticks hot, accompanied by the spicy paprika aioli for dipping.
