Instant Pot Pork Loin with Stuffing & Green Beans

1.Set the Instant Pot to 'Sauté' mode and add olive oil. Once hot, season the pork loin with garlic powder, onion powder, thyme, salt, and pepper. Sear the pork loin for about 3-4 minutes on each side until browned. Remove the pork and set aside.

2.Add the vegetable broth to the pot, scraping the bottom to deglaze and lift any browned bits.

3.Place the pork loin back into the pot. Sprinkle the stuffing mix evenly over the pork loin, then add the green beans on top of the stuffing.

4.Close the Instant Pot lid and set the valve to 'Sealing'. Select 'Manual' or 'Pressure Cook' and set the timer for 30 minutes on high pressure.

5.Once the cooking time is complete, allow for a natural release for 10 minutes, then carefully switch the valve to 'Venting' to release any remaining pressure.

6.Remove the pork loin and let it rest for 5 minutes before slicing. Fluff the stuffing with a fork and stir in the green beans. Serve slices of pork with stuffing and green beans on the side, garnished with fresh parsley.
