Praline Chocolate Martini Cups with Pistachio Cream and Kataifi Crunch

1.Prepare the praline chocolate mousse: Melt the dark chocolate gently over a double boiler until smooth. Let it cool slightly.

2.In a clean bowl, whisk the egg yolks with half of the granulated sugar until pale and creamy.

3.In another bowl, whip 100ml of heavy cream to soft peaks.

4.Fold the melted chocolate into the egg yolk mixture carefully, then fold in the whipped cream until smooth and homogeneous. Refrigerate.

5.Whip the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining granulated sugar and continue whipping until stiff peaks form.

6.Gently fold the egg whites into the chocolate mixture in three parts, preserving as much air as possible. Chill the mousse for at least 2 hours.

7.Prepare the pistachio cream layer: In a food processor, blend pistachio nuts with powdered sugar and vanilla extract until finely ground.

8.Whip the remaining 100ml heavy cream to medium peaks and fold into the pistachio mixture to create a smooth pistachio cream. Refrigerate.

9.Prepare the kataifi crunch: Melt the unsalted butter in a pan over medium heat. Add the kataifi pastry and stir continuously until golden brown and crispy, about 5-7 minutes. Remove from heat and let cool.

10.In martini glasses, start layering: first add a thin layer of crumbled crispy chocolate cookie or cake at the bottom for texture.

11.Next, spoon a layer of praline chocolate mousse (about one-third of the glass).

12.Add a layer of pistachio cream over the mousse, smoothing the surface gently.

13.Sprinkle a generous layer of kataifi crunch on top of the pistachio cream for a crispy contrast.

14.Repeat layering if the glass size allows, finishing with a glossy praline chocolate mousse layer on top.

15.Chill the assembled cups for at least 1 hour to set all layers.

16.Before serving, dust the top with cocoa powder and optionally garnish with edible gold leaf or chopped pistachios for elegance.
