Translucent Strawberry Globe with Lava-Like Filling

1.Prepare the strawberry coulis filling: In a small saucepan, combine chopped strawberries, granulated sugar, and lemon juice. Cook over medium heat until strawberries break down and mixture simmers, about 8-10 minutes.

2.Mix cornstarch with 1 tablespoon of water to create a slurry. Stir the slurry into the strawberry mixture and cook for 2-3 more minutes until thickened.

3.In a small bowl, sprinkle powdered gelatin over 50ml cold water and let bloom for 5 minutes.

4.Remove the strawberry mixture from heat and stir in the bloomed gelatin until fully dissolved. For a more vivid red lava effect, add a few drops of red food coloring and mix well.

5.Allow the coulis to cool slightly, then transfer into small silicone half-sphere molds (approx. 3cm diameter). Freeze until solid, about 2 hours.

6.Prepare the translucent strawberry globe shell: Spray the inside of a strawberry-shaped silicone mold lightly with vegetable oil spray to prevent sticking.

7.In a heavy-bottomed saucepan, melt isomalt crystals over medium heat, stirring gently until fully liquefied and clear. Add 1 teaspoon white vinegar to stabilize the sugar and prevent crystallization.

8.Carefully pour a thin layer of molten isomalt into the mold, swirling to coat the entire interior surface. Let it cool for 1-2 minutes until slightly set but still pliable.

9.Place a frozen strawberry coulis half-sphere into the center of the mold, then pour another thin layer of molten isomalt over it to seal completely. Work quickly to avoid melting the coulis.

10.Allow the mold to cool completely at room temperature until the isomalt hardens into a clear, glass-like shell, about 30 minutes.

11.Gently unmold the strawberry globe by flexing the silicone mold. Handle carefully to avoid cracks.

12.Prepare a white chocolate ganache glaze: Heat heavy cream until just boiling, then pour over finely chopped white chocolate. Stir until smooth and glossy. Optionally, add a pinch of edible red glitter for sparkle.

13.Place the strawberry globe on a serving plate and drizzle with the white chocolate ganache glaze to mimic the natural sheen of a strawberry.

14.Garnish the plate with fresh mint leaves for color contrast.

15.To serve, slice the strawberry globe carefully with a sharp knife. The red strawberry coulis inside will ooze out like lava, creating a dramatic and delicious effect.
