Fermented Cat's Piss Herbal Infusion

1.Bring 1 liter of the filtered water to a gentle boil in a saucepan.

2.Remove from heat and add the dried nettle leaves, chamomile flowers, lemon balm, rosemary, and thyme to the hot water. Cover and steep for 20 minutes to create a strong herbal infusion.

3.Strain the herbal infusion through a fine mesh sieve or cheesecloth into a large mixing bowl or clean container, discarding the herbs.

4.Add the raw honey (or organic sugar) to the warm herbal infusion and stir thoroughly until fully dissolved.

5.Add the remaining 1 liter of filtered water at room temperature to the mixture to cool it down to about 25°C (77°F).

6.Stir in the fresh lemon juice and the active dry yeast or wild fermentation starter, mixing gently but thoroughly.

7.Pour the mixture into the clean 2-liter glass fermentation jar and seal with an airlock to allow gases to escape while preventing contamination.

8.Place the jar in a dark, room-temperature location (20-24°C or 68-75°F) to ferment for 24 to 48 hours. Begin tasting after 24 hours to monitor flavor development; fermentation time can be adjusted based on desired tanginess and aroma.

9.Once fermentation reaches your preferred level, transfer the beverage to the refrigerator to slow fermentation and improve clarity.

10.Serve chilled in small glasses, optionally garnished with fresh herbs such as a sprig of thyme or lemon balm for aroma and presentation.

11.Note: This fermentation will have a pungent, herbal aroma reminiscent of the bold name 'Cat's Piss,' but offers a complex and refreshing flavor experience. Consume within one week for best quality.
