Jello Poke Cake

1.Preheat your oven to 175 C (350 F). Grease and flour a 9x13 inch baking pan.

2.Prepare the cake batter according to the instructions on the box mix, using the eggs, water, and oil specified. Pour the batter evenly into the prepared 9x13 inch pan.

3.Bake the cake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean. Remove the cake from the oven and let it cool on a wire rack for 15 minutes.

4.While the cake is still warm, use a large fork or the handle of a wooden spoon to poke holes all over the cake surface, spacing them about 1 inch apart. Ensure the holes go almost all the way to the bottom of the cake.

5.Prepare the Jello filling: In two separate bowls, dissolve the strawberry gelatin in 1 cup of boiling water and the lime gelatin in the remaining 1 cup of boiling water. Stir each until the powder is completely dissolved (about 2 minutes).

6.Add 1/2 cup of cold water to the strawberry mixture and 1/2 cup of cold water to the lime mixture. Stir well.

7.Spoon the prepared Jello mixtures over the cake, alternating the colors to create a vibrant, marbled effect in the holes. Try to pour the liquid directly into the holes rather than just coating the top of the cake.

8.Cover the cake loosely with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to allow the Jello to fully set and absorb into the cake.

9.Prepare the whipped topping: In a large, chilled bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Beat with an electric mixer on high speed until stiff peaks form (about 3-5 minutes).

10.Spread the whipped topping evenly over the chilled, set cake. Garnish with fresh fruit or sprinkles, if desired. Keep the cake refrigerated until ready to serve.
