Classic Caribbean Pit-Smoked Jerk Pork Ribs

1.Prepare the Dry Rub: In a small bowl, thoroughly combine all dry rub ingredients: brown sugar, smoked paprika, salt, allspice, thyme, black pepper, garlic powder, onion powder, cinnamon, cayenne, nutmeg, and cloves. Mix well until uniform.

2.Prepare the Ribs: Remove the thin membrane (silverskin) from the bone side of each rack of ribs using a dull knife or paper towel for grip. Pat the ribs completely dry with paper towels.

3.Apply the Rub: Generously coat all sides of the ribs with the dry rub, pressing it firmly into the meat. Allow the seasoned ribs to rest uncovered in the refrigerator for at least 4 hours, or preferably overnight, to allow the salt to penetrate.

4.Prepare the Smoker: Preheat your smoker to a consistent temperature of 225°F (107°C). Use a mild, complementary wood for smoke, such as apple, cherry, or pimento wood (if available) for authentic flavor.

5.Start Smoking: Place the seasoned ribs directly on the smoker grates, bone-side down. Maintain the temperature at 225°F (107°C). Smoke for 3 hours without opening the smoker lid.

6.Prepare the Basting Sauce: While the ribs smoke, combine all basting sauce ingredients (soy sauce, vinegar, molasses, brown sugar, ketchup, Worcestershire, ginger, garlic, Scotch bonnets, thyme, allspice berries, pepper, and oil) in a medium saucepan. Bring to a simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer gently for 15 minutes, allowing the flavors to meld. Strain the sauce through a fine-mesh sieve to remove solids, pressing down on the solids to extract maximum liquid. Keep the sauce warm.

7.The Wrap (Optional but Recommended): After 3 hours, wrap each rack of ribs tightly in heavy-duty aluminum foil (or use the 'Texas Crutch' method by placing them on a large sheet of foil and adding a splash of apple juice or water before sealing). Return the wrapped ribs to the smoker for another 2 to 3 hours, until they are tender and probe easily.

8.Apply the Glaze: Carefully unwrap the ribs, draining off any accumulated liquid. Increase the smoker temperature to 275°F (135°C). Brush the ribs liberally on all sides with the prepared dark jerk basting sauce.

9.Finish and Set the Glaze: Return the unwrapped, sauced ribs to the smoker. Continue cooking for 30 to 45 minutes, basting every 15 minutes, until the sauce has caramelized into a dark, sticky glaze. Monitor closely to prevent the sugars from burning.

10.Rest and Serve: Remove the ribs from the smoker. Let them rest tented loosely with foil for 15 minutes before slicing between the bones. Serve immediately with any remaining warm basting sauce on the side.
