Classic Orange Drop Cookies

1.Preheat your oven to 190°C (375°F). Line baking sheets with parchment paper.

2.In a large bowl, cream together the softened butter and granulated sugar using an electric mixer until light and fluffy, about 3-4 minutes.

3.Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Mix in the fresh orange juice, orange zest, and vanilla extract until just combined.

4.In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt.

5.Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix the dough.

6.Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

7.Bake for 9 to 11 minutes, or until the edges are lightly golden brown and the centers are set but still soft. They will look slightly underdone in the middle.

8.Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

9.If making the glaze: Whisk together the powdered sugar and 2 tablespoons of orange juice until smooth. Add more juice, a half teaspoon at a time, until you reach a thick but pourable consistency.

10.Once cookies are completely cool, drizzle the orange glaze over the tops. Allow the glaze to set before serving.
