Classic Aromatic Chicken Curry

1.Pat the chicken pieces dry and season lightly with salt and pepper. Set aside.

2.In a large pot or Dutch oven, heat the vegetable oil or ghee over medium heat. Add the chopped onion and sauté for 6-8 minutes until softened and translucent.

3.Add the minced garlic and grated ginger to the pot. Cook for 1 minute until fragrant, stirring constantly to prevent burning.

4.Reduce the heat to low. Add all the dry spices (coriander, cumin, turmeric, garam masala, and cayenne pepper) to the pot. Stir continuously for about 30 seconds to toast the spices; this deepens their flavor.

5.Pour in the diced tomatoes (with their juices) and the chicken broth. Stir well, scraping up any browned bits from the bottom of the pot. Bring the mixture to a gentle simmer.

6.Add the seasoned chicken pieces to the simmering sauce. Stir to ensure the chicken is fully submerged. Cover the pot, reduce heat to low, and let it simmer for 15-20 minutes, or until the chicken is cooked through and tender.

7.If using, stir in the coconut milk or heavy cream during the last 5 minutes of cooking for a richer, creamier texture. Taste the curry and adjust salt and pepper as needed.

8.Remove from heat. Stir in half of the fresh cilantro.

9.Serve the Classic Aromatic Chicken Curry hot over fluffy basmati rice or with warm naan bread, garnished with the remaining fresh cilantro.
