Sheet Pan Sausage and Roasted Veggies

1.Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper for easier cleanup.

2.In a large bowl, combine the cut sausages, red bell pepper, green bell pepper, onion, and zucchini.

3.Drizzle the olive oil over the sausage and vegetables. Add the dried oregano, garlic powder, and black pepper. Toss everything together until well coated. Add salt to taste, remembering that sausages can be salty.

4.Spread the sausage and vegetable mixture in a single layer on the prepared baking sheet. Ensure not to overcrowd the pan, as this can steam the vegetables instead of roasting them. If necessary, use two baking sheets.

5.Roast for 25-30 minutes, stirring halfway through, until the sausages are cooked through and browned, and the vegetables are tender-crisp and slightly caramelized.

6.Remove from the oven. Garnish with fresh chopped parsley, if desired, and serve immediately.
