Microwave Arborio Sushi Rice

1.Place the arborio rice in a fine-mesh sieve and rinse under cold running water until the water runs mostly clear, then drain well.

2.Transfer the rinsed rice into the microwave rice cooker base.

3.Add 2 1/4 cups of water to the cooker, noting that arborio rice typically requires slightly more water than short-grain Japanese rice.

4.Place the rice cooker lid on securely and microwave on high power for 15 to 18 minutes. Arborio rice takes a bit longer to hydrate fully.

5.Remove the cooker from the microwave and let it stand, covered, for 10 to 12 minutes to allow the rice to finish absorbing the moisture.

6.While the rice rests, whisk together the rice vinegar, sugar, and salt in a small bowl until the solids are completely dissolved.

7.Transfer the cooked rice to a wide, non-metallic bowl and drizzle the vinegar mixture evenly over the top.

8.Using a rice paddle, gently fold the rice with a slicing motion to incorporate the seasoning, then allow it to cool to room temperature before using.
