Goan Spiced Chicken

1.In a bowl, mix together all the marinade ingredients.

2.Add the chicken pieces to the marinade and coat them well. Let the chicken marinate for at least 1 hour, preferably overnight.

4.Heat oil in a large pan over medium heat.

5.Add the chopped onions and sauté until golden brown.

6.Add the tomato puree, sugar, and tamarind paste. Cook for 2-3 minutes.

7.Add the marinated chicken pieces along with the marinade. Mix well and cook for 5-7 minutes.

8.Pour in the coconut milk and water. Stir well and bring the curry to a simmer.

9.Cover the pan and let the curry cook for 30-40 minutes, or until the chicken is cooked through and tender.

10.Garnish with fresh coriander leaves and serve hot with steamed rice or naan bread.
