Eggplant Bacon

1.In a small bowl, combine soy sauce, maple syrup, liquid smoke, smoked paprika, garlic powder, and onion powder to make the marinade.

2.Slice the eggplant into thin strips, about 1/8-inch thick.

3.Place the eggplant slices in a large shallow dish and pour the marinade over them. Make sure each slice is coated evenly.

4.Cover the dish with plastic wrap and refrigerate for at least 1 hour, or overnight for best results.

5.Preheat the oven to 375°F (190°C).

6.Remove the eggplant slices from the marinade and place them on a baking sheet lined with parchment paper.

7.Brush each slice with olive oil to help them crisp up in the oven.

8.Bake for 15-20 minutes, or until the edges of the eggplant slices start to brown and crisp up.

9.Flip the slices over and bake for an additional 10-15 minutes, or until they reach your desired crispiness.

10.Remove from the oven and let cool for a few minutes before serving.
