Chicken in Sweet and Sour Sauce

Prepare the Sauce In a small bowl, whisk together the soy sauce, rice vinegar, ketchup, honey, cornstarch, and water until well combined. Set aside.

Marinate the Chicken In a medium-sized bowl, marinate the chicken pieces in soy sauce, cornstarch, salt, and black pepper for about 15 minutes.

Stir-Fry the Vegetables Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the onion, bell pepper, carrot, garlic, and ginger. Stir-fry for 5-6 minutes, or until the vegetables are slightly tender.

Cook the Chicken Push the vegetables to one side of the skillet and add the marinated chicken to the other side. Cook for 6-8 minutes, or until the chicken is cooked through and browned.

Add the Sauce Pour the prepared sauce over the chicken and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes, or until the sauce has thickened.

Garnish and Serve Garnish with sliced green onions and sesame seeds. Serve the chicken in sweet and sour sauce over steamed rice or noodles.
