Artificial Red Caviar

1.In a large pot, bring the fish broth to a boil.

2.Add the tapioca pearls to the boiling broth and cook for 10 minutes, stirring occasionally.

3.In a separate small pot, combine the beet juice and agar-agar powder. Heat over low heat until the agar-agar powder completely dissolves, stirring constantly.

4.Pour the beet juice mixture into the pot with the tapioca pearls and stir well.

5.Add the salt and sugar to the pot and continue to cook over medium heat for another 5 minutes, stirring constantly.

6.Remove the pot from the heat and let the mixture cool for a few minutes.

7.Using a spoon, carefully transfer the mixture into caviar molds or small spoonfuls onto a lined baking sheet.

8.Place the molds or baking sheet in the refrigerator and let the caviar set for at least 2 hours, or until firm.

9.Once the caviar is set, remove from the molds or baking sheet and transfer to a serving dish.

10.Serve the artificial red caviar chilled as a topping or garnish for dishes like sushi, salads, or canapés.
