Berry Bliss Cake

Preparing the Berry Filling In a saucepan, combine the frozen mixed berries, sugar, and powdered sugar over medium heat. Stir occasionally until the berries release their juices and the sugar dissolves, about 8-10 minutes.

Thickening the Berry Filling For a thicker consistency, mix 2 tablespoons of cornstarch with a little water to form a slurry. Stir into the berry mixture and cook for an additional 2 minutes until the filling thickens. Set aside to cool.

Preparing the Cream Cheese Layer In a mixing bowl, beat the cream cheese, sugar, and powdered sugar until smooth. Add the egg (and vanilla extract if using) and mix until well combined. Set aside.

4.Preheat the oven to 350°F (180°C) and grease a 9x13-inch baking pan.

5.Spread the cake mix evenly on the bottom of the prepared pan to create the base layer.

6.Pour the cooled berry filling over the cake mix, spreading it out evenly.

7.Carefully spoon the cream cheese mixture over the berries, spreading it to cover the entire surface.

8.Bake in the preheated oven for 30-35 minutes or until the cake is set and the edges are lightly golden brown.

9.Remove from the oven and let it cool completely before slicing into squares.
