Mega Taco

1.In a large bowl, mix together the all-purpose flour and salt. Gradually add the vegetable oil and warm water, stirring until a dough forms.

2.Turn the dough out onto a lightly floured surface and knead until smooth and elastic, about 5 minutes.

3.Divide the dough into two equal parts. Roll each part out into a thin, large circle, approximately 16 inches in diameter.

4.Heat a large skillet or griddle over medium heat. Cook each tortilla for about 1 minute on each side, or until lightly browned and puffy. Set aside.

5.In a large pan, cook the ground beef over medium heat until browned. Drain any excess fat.

6.To the ground beef, add the taco seasoning (chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper). Cook for another 5 minutes, stirring frequently.

7.To assemble the mega taco, lay out a large tortilla on a flat surface. Spread a layer of the seasoned ground beef across the center of the tortilla.

8.Top the beef with shredded lettuce, diced tomato, chopped red onion, shredded cheddar cheese, and a dollop of sour cream.

9.For the guacamole, mash the avocados in a medium bowl. Stir in the chopped red onion, jalapeño, lime juice, and salt. Spread a generous layer of guacamole over the other ingredients in the taco.

10.Garnish the taco with fresh cilantro and lime wedges. Carefully fold the tortilla over the fillings to close the mega taco.

11.Serve immediately, cutting the mega taco into segments if desired, to share with friends or family.
