Blue Forest Blackberry Cake

1.Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.

2.In a bowl, whisk together the flour, baking powder, baking soda, and salt.

3.In a separate bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

4.Alternate adding the dry ingredients with the sour cream and milk to the butter mixture, beginning and ending with the dry ingredients.

5.Gently fold in the fresh blackberries.

6.If desired, add a few drops of blue food coloring to the batter to achieve a light blue hue.

7.Pour the batter into the prepared cake pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

8.Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

9.Once cooled, top the cake with fresh blackberries and serve.
