Spicy Beetroot Rice

1.Peel and grate the beetroot. Finely chop the onion and tomato.

2.In a pan, heat some oil over medium heat and add the chopped onions. Saute until translucent.

3.Add the grated beetroot, turmeric, salt, and chilli powder. Cook until the beetroot softens, stirring occasionally.

4.Add chopped tomato and cook until it breaks down and blends in with the beetroot mix.

5.Meanwhile, cook the rice according to package instructions.

6.Once the beetroot mixture is well-cooked, add the cooked rice to the pan. Mix everything together gently to combine the flavors.

7.Cook on low heat for a few more minutes to allow the rice to absorb the flavors of the beetroot mixture.

8.Serve hot and enjoy the flavorful and spicy beetroot rice!
