Birthday Spring Rolls

1.Prepare all the ingredients - cook and shred the chicken, cook the vermicelli noodles according to package instructions, and chop the vegetables and herbs.

2.Fill a shallow dish with warm water. Dip one spring roll wrapper into the water for a few seconds until it softens. Place the wrapper on a clean surface.

3.In the center of the wrapper, place a small amount of shredded lettuce, carrots, cucumbers, mint, cilantro, chicken, vermicelli noodles, and a shrimp.

4.Fold the sides of the wrapper over the filling, then roll it up tightly, resembling a burrito. Repeat with the remaining ingredients.

5.Serve the spring rolls with sweet chili sauce for dipping and enjoy!
