Ultimate Birthday Gumbo

1.In a large pot, heat vegetable oil over medium heat. Add the flour to make a roux, stirring constantly until dark brown, about 20-25 minutes.

2.Add the onion, bell pepper, celery, and garlic to the roux. Cook for 5-7 minutes until vegetables are softened.

3.Slowly add the chicken broth and water, stirring well to avoid lumps. Bring to a boil, then reduce to a simmer.

4.Add the chicken thighs, andouille sausage, diced tomatoes, bay leaves, thyme, paprika, cayenne pepper, black pepper, and white pepper. Simmer for 30 minutes, stirring occasionally.

5.Add the okra, shrimp, and gumbo file powder. Simmer for an additional 15 minutes until the shrimp is cooked through.

6.Season with salt to taste if needed.
