Mango Cake

1.Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan with butter and flour.

2.In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.

3.In a separate bowl, beat the eggs, vegetable oil, vanilla extract, mango juice, mango puree, and sour cream until well combined.

4.Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

5.Gently fold in the diced mango, walnuts, and shredded coconut (if using).

6.Pour the batter into the prepared baking pan and spread it evenly with a spatula.

7.Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean.

8.Remove the cake from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
